* Place peeled & diced sweet potato in MINI Casserole and drizzle with Olive Oil.
* Add lid to MINI and bake in Microwave for 2 minutes.
* Add 3/4 cup Egg Whites and seasoning. Stir.
* Return lid and bake in microwave for an additional 2 minutes.
